蛹虫草子实体与发酵菌丝体的氨基酸组成差异比较

摘要(Abstract):

目的对蛹虫草子实体及发酵菌粉的氨基酸含量进行分析。方法采用同一个蛹虫草菌株,选取固体栽培与深层发酵两种培养方法获得的产物,采用氨基酸分析仪对其主要营养成分氨基酸进行比较分析。结果蛹虫草子实体和虫草菌粉的氨基酸种类丰富,均含有包括人体必需氨基酸在内的17种常见氨基酸,虫草菌粉主要含谷氨酸、天冬氨酸、亮氨酸和丙氨酸等。虫草发酵菌粉中总氨基酸含量、必需氨基酸占总氨基酸比值显著高于蛹虫草子实体。结论从氨基酸的角度来看,虫草发酵菌粉的营养价值要优于蛹虫草子实体。
OBJECTIVE The amino acid compositions of fruiting body and fermentative mycelia from Cordyceps militaris are analyzed. METHODS The products obtained from solid cultivation and submerged fermentation of Cordyceps militaris were employed and subjected for comparative analysis of amino acids composition by Amino Acid Analyzer. RESULTS The amino acid contents of fruiting body and fermentative mycelia from Cordyceps militaris are abundant,both of which include 17 essential amino acids to human body. The major constituents were glutamic acid,asparagic acid,leucine,and alanine. The total amino acid content and proportion of the essential amino acids in total amino acids for fermentative mycelia were significantly higher than that for fruiting body. CONCLUSION In consideration of amino acids composition,the nutritional value of fermentative mycelia powder showed an advantage over fruiting body.
